The Aging Process

We age our beer in the kegs that will be delivered to our customers to ensure freshness, full flavor and no chance of contamination from any further racking of the beers.
 
The standard size keg people see most is 15 1/2 gallons, and is called a "half barrel."  We also keg in a "quarter barrel" keg on request, which is 7 3/4 gallons.  We pressurize (carbonate) a keg for 48 hours after it has been sitting in the walk-in cooler for 24 hours in order to cool down.  The total walk-in cooler time is 36 hours.
 
Our keg turn-over rate is very high, due to high area demand for our beers.  IPA's are sent out very quickly ... almost as soon as they are carbonated.  Our Industrial IPA is always sold out even before it is brewed, and moves out as fast as we can process it.  Our Brown Ale (as well as other house beers) sit at room temperature storage for the most part, and when required, we roll them into the walk-in cooler, and run them through the carbonation process as needed.
