Sometimes we like to make a beer that is unique in style,
unique in ingredients, and unique in taste, just because we love brewing
so much. And of course, also so that you can enjoy the fruits
of labor and genius right along with us. Some of the special
beers that we liked enough to plan on making again are listed below. This
is a list that will steadily grow, so check back often to see what is
new and exciting
We took the mash from our rich and unique Ice Breaker Barley Wine, and reprocessed the malts through the mash tun a second time. We then changed the hops to Willamettes, and fermented and processed with the usual Diamond Knot methods. The result is wonderfully light, and refreshing micro brew beer that is perfect for a hot day, or a long night.

A "wit" beer is a style truly unique to Germany, and is faithfully
reproduced here for fans of German wheat beers and Diamond Knot.
A "wit" is by definition, a white wheat beer. The color of our Wit
is beige/white and cloudy with all of the unfiltered goodness we could
capture. The nose of this beer changes with age, and has a pleasant
odor of coriander and fruit. The taste starts with an incredibly
smooth mouth-feel, followed by a nutty, sweet, effervescent and smooth,
creamy finish. This is one beer that will quickly become a "comfort
beer" for cold nights in the Northwest.
