Diamond Knot Hefe-Weizen is golden in color with a cloudy appearance, which is what makes this style so easily recognized. Our Hefe-Weizen, which is more of a Bavarian style beer, is 4.0% alcohol by weight (5.3% by volume). It is very lightly hopped to let it's "True-to-Style" flavors come from the yeast and malts.

Most U.S. breweries, such as Widmer, use their standard strain
of yeast for all beers that they produce, including their Hefe-Weizen. Diamond
Knot uses traditional yeast in our Hefe-Weizen, giving it a true, straight-from-Germany
taste. The traditional yeast used is a strain that comes from
Weilhenstephan, Germany. It is this strain that gives the beer
a clove and/or vanilla-like flavor.
An imported Hefe-Weizen that is readily available to the U.S. consumer is Paulaner. It is this product that many Hefe-Weizen brewers are unwisely attempting to dupilcate. It is Diamond Knot's goal to produce a quality Hefe-Weizen that is true to the German style.
Hefe-Weizen is a style of beer that originates in Southern Germany. Hefe
(hefa) means "yeast." Weizen (vi-son) literally means wheat,
but colloquially means wheat beer or Weissbier. All true Weissbiers
use about 50% malted wheat in the mash process, and are just lightly hopped
for a lighter and less bitter finish.
